BBQ Sweet Potato
2 pieces of baked chicken (3oz each)
1 baked sweet potato
½ cup shredded cheese
½ cup black beans
1 tbsp BBQ sauce
¼ cup greek yogurt
¼ tsp nutmeg
½ tsp chili powder
Cut sweet potato in half once cooled
Using a fork, lightly scrape the inside of the potato so it is loose.
Add shredded chicken, ¼ cup black beans, ¼ cup cheese to each half and bake/microwave to melt cheese.
Mix BBQ sauce, greek yogurt, nutmeg, and chili powder. Use half the mixture to top each potato.
Add steamed veggies on top or on the side!
