Black Bean Brownies

Makes 12 brownies

Ingredients

1 1/2 cups black beans (1 15-oz can)

2 tbsp cocoa powder

1/2 cup quick oats

1/4 tsp salt

1/3 cup honey, maple syrup or agave

1/4 cup coconut or vegetable oil

2 tsp vanilla extract

1/2 tsp baking powder

1/2 cup to 2/3 cup chocolate chips

optional: additional chocolate chips on top

Directions

  1. Preheat oven to 350°

  2. Mix all the ingredients (except the chips) in a food processor until very smooth

  3. Stir in the chips and pour evenly into a greased 8×8 pan

  4. Bake brownies for 15-18 minutes and let cool for 10 minutes

  5. Cut and enjoy!
