Chickpea Veggie Burger

Ingredients
1 can chickpeas
2 eggs
½ cup oats
2 cups veggies, fresh or frozen
½ cup shredded cheese
Seasonings of your choice
Coconut oil
Garlic Aioli
2 cloves garlic
1 egg yolk
2 tsp lemon juice
½ tsp Dijon mustard
¼ cup olive oil
Salt and pepper to taste

Directions

Rinse chickpeas and place in a bowl. With a fork or masher, mash chickpeas until mostly smooth.

Finely chop veggies. If frozen, defrost or microwave first.

Add 2 eggs, oats, cheese, and veggies and mix together.

Heat about 1 tbsp of coconut oil in a pan on medium heat.

Use a half cup measure, scoop mixture and form into a ball. Place in pan and flatten slightly. Allow to cook for about 3-4 minutes, until browned on one side. Flip over and cook for another 3-4 minutes.

Serve with a lettuce wrap and add any toppings you’d like!
For the Aioli:

Finely chop and mash the garlic so it forms a paste.

In a metal bowl, whisk together egg yolk, lemon juice, and Dijon.

Add olive oil very slowly, a few drops at a time, to the mixture and whisk thoroughly. Continue whisking until all of the oil is used and the mixture thickens.

Once you have thoroughly mixed the aioli, add the garlic paste and mix to combine.
