Cottage Cheese Deviled Eggs
1/2 cup cottage cheese
1 tbsp dijon mustard
Salt and pepper to taste
1. Hard boil the eggs: Place eggs in an a saucepan and cover with water up to about 1 inch above the eggs. Add 1 tsp baking soda to the water. Heat until boiling then allow to boil for 1 minute. Remove from heat and cover for 12 minutes. Place in an ice bath and allow to cool fully.
2. Peel off the shell, cut in half, and remove the yolk. Place yolk in a bowl. Add cottage cheese, dijon mustard, and other seasonings and mash together.
3. Place egg yolk mixture inside the egg white. Chill until ready to serve.
