Cottage Cheese Pancakes

Serves 1


½ cup cottage cheese

¼ cup oats

1/3 cup egg whites

1 tsp vanilla

1 tsp cinnamon (optional)

1 tbsp peanut butter


  1. Mix cottage cheese and egg whites in a blender until combined. Add oats and vanilla and blend until smooth.

  2. Coat a small skillet with cooking spray and heat to medium.

  3. Pour batter in pan and cook until golden brown. Flip and cook other side until gold brown.

  4. Spread 1 tbsp of peanut butter over pancake and roll up. Try adding a few sliced strawberries.
