Mediterranean Chickpea Salad
1 (15 oz) Can garbanzo beans (aka chickpeas)
1/8 cup Flat leaf parsley, chopped
1/2 cup Red bell pepper, diced
1/2 cup Roma tomato, diced
1/2 cup English cucumber, diced
1/8 cup olives, sliced
1/8 cup Red onion, finely chopped
8oz Feta cheese
3 tbsp olive oil
1/2 tbs Lemon juice
1/2 tbs Red wine vinegar
1/4 tsp Garlic, chopped
Pinch Salt and pepper (or to taste)
Drain and rinse chickpeas. Wash and dice vegetables to bite size pieces.
Add together in a medium bowl with the sliced olives and feta.
Combine dressing ingredients in a shaker bottle or whisk in a small bowl. Pour dressing over salad. Chill in the fridge or enjoy immediately.
